Mediterranean Ravioli Dinner
Ingredients
- 1 package Parla Cheese Ravioli or Florentine Ravioli
- 8 oz sweet Italian or natural chicken sausage
- 2 tsp olive oil
- 1 cup onion, vertically sliced
- 2 tsp Garlic, minced
- 1 lb Cherry tomatoes, halved
- 1/4 tsp salt
- 1/8 tsp black pepper
- 4-8 tbsp Parmigiano-Reggiano cheese, grated
- 1/4 cup fresh basil leaves, thinly sliced

Instructions
- Cook pasta according to package directions; drain.
- Heat a large nonstick skillet over medium-high heat. Add oil to pan; swirl to coat. Add onion and cook 4 minutes. Remove from pan.
- Remove casings from sausage. Add sausage to pan and cook completely.
- Add onions back to pan and add garlic and tomatoes.
- Season with salt and pepper. Cook for 5-10 minutes.
- Ladle sauce over the cooked ravioli.
- Garnish with parmesan and basil.
