Vegetarian Mushroom and Caramelized Onion Sauce

Ingredients
- 1 package Parla Portabella Mushroom Ravioli
- 3 lbs Mushrooms, button or baby portabella chopped
- 1 large Sweet onion, thinly sliced
- 1/4 cup olive oil
- 3 cloves Garlic, minced
- 1/4 cup Flat leaf Italian parsley, chopped
- Salt and pepper

Instructions
- Cook Parla Portabella Mushroom Ravioli according to package directions. Drain and toss in some olive oil.
- Heat olive oil in a large stainless steel sauté pan on medium-high heat. Add onions and generously season with salt. Cook about 5 minutes until onions begin to soften and caramelize.
- Add sliced mushrooms and continue to cook for 5 minutes until mushrooms turn brown. Mushrooms will produce some liquid, continue cooking until liquid reduces in volume.
- Add minced garlic in the last minute, add the parsley and season salt and pepper.
- Pour finished sauce over cooked ravioli and enjoy!
