Vegetarian Mushroom and Caramelized Onion Sauce
Parla Portabella Mushroom Ravioli
Mushrooms, button or baby portabella chopped
Sweet onion, thinly sliced
Flat leaf Italian parsley, chopped
Salt and pepper
Cook Parla Portabella Mushroom Ravioli according to package directions. Drain and toss in some olive oil.
Heat olive oil in a large stainless steel sauté pan on medium-high heat. Add onions and generously season with salt. Cook about 5 minutes until onions begin to soften and caramelize.
Add sliced mushrooms and continue to cook for 5 minutes until mushrooms turn brown. Mushrooms will produce some liquid, continue cooking until liquid reduces in volume.
Add minced garlic in the last minute, add the parsley and season salt and pepper.
Pour finished sauce over cooked ravioli and enjoy!
